Desperate Measures + Almost Ice Cream Pie

It's been hot lately. At least during the day, anyway. The evenings and night are deliciously cool.

Seeing as how it is so hot lately, and seeing that we don't have AC in our Little House on the Airport (apart from a small, broken window shaker in our bedroom), we've had to go to some desperate measures to stay cool.


Sad? A little bit. Necessary? Absolutely.

We also have several fans placed strategically around the house to move the air around, in an attempt to keep us cool.


We found this on sale at Wal-Mart. We very scientifically discovered just how strong to make the tea so that it would be the same concentration in this lovely container as in our small pitcher.

...Josh's sweet tea doesn't last very long up here.

I also took it upon myself to make an almost ice cream pie. I call it an almost ice cream pie because it doesn't have any ice cream in it; but it almost tastes like it does.

Almost.

My mom used to make this pie a lot, and I always loved it, even though I'm not a big fan of pistachio pudding.

That's it! It's wonderfully easy, deliciously cool, and light. In other words, it's great for a summer dessert!

I'm sure this would work with any other pudding you'd like.
